Primary Responsibilities: a) This position is the first point of contact for students (freshmen) requesting a Meal Plan Exemption due to special dietary needs or other medical reasons. b) The position is expected to monitor Dining Service operations to ensure conformance to nutritional, safety, sanitation and quality standards. c) Develop policies for Dining Services or nutritional programs to assist in health promotion and disease control. d) Inspect meals served for conformance to prescribed diets and standards of palatability and appearance. e) Assist Executive Chef with recipe development, standardization, and on-going recipe analysis. f) Work with Dining Service Team to develop new menus for operations, including but not limited to: U of MN Duluth Catering, Dining Center, and Retail Operations.

Required Qualifications: BA/BS or a combination of related education and work experience to equal 4 years; thorough knowledge of the principles and practices of nutritional care. Must be a Registered Dietitian (RD) in the State of Minnesota prior to the date of hire.
