he Cook Assistant (prep cook) supports culinary staff in a variety of functions. You will be responsible for washing and cutting meats and vegetables, preparing a variety of ingredients for cooking, monitoring inventory and waste levels, provide service to guests and maintain the kitchen to ensure that it is sanitized by cleansing areas before and after use and making sure that equipment and knives are clean.

Duties and Responsibilities *Follow written production sheets and recipes *Complete production and waste sheets as assigned
Customer Service *Lead by example and follow customer service standards outlined in the employee handbook. *Works in a team-driven environment, take direction, delegates tasks and assists with problem-solving *Understands Vanderbilt Campus Dining Meal Plans and can explain the guidelines of the plan to customers
Safety and Sanitation *Maintains quality, safety and sanitary standards of State and City Health Departments and Vanderbilt Campus Dining codes *Maintains a clean and orderly work area and complete other general cleaning duties *Reports to management any safety hazards and equipment in need of repair
Profile of an Ideal Candidate *Proven experience as a prep cook is preferred, but not required *Ability to read Vanderbilt Campus Dining documents with or without accommodations *Basic recipe preparation and/or execution to include basic culinary language, techniques and ingredient identification *Cover, date and correctly store all food items as per safe food-handling procedures *Basic knife skills *Ability to lift at least 50 lbs. regularly *Ability to bend, stoop and kneel
