Dining Services is comprised of residential dining (3 dining commons serving a combined average of 5,900 meals per day), retail operations (over 15 outlets of; local convenience stores, markets, branded concepts and food trucks) a campus catering operation serving special events across campus, and an onsite campus commissary where local goods and ready to eat products are produced.

Job Summary: Under general supervision by unit Managers and Supervisors, perform cold food preparation including, but not limited to: cutting, slicing, chopping, peeling and preparation of sandwiches, salads and variety of express to go meals. As assigned, perform hot food preparation including, but not limited to reheating, baking, steaming and roasting. Assemble & heat food as requested by customer orders or production needs using various kitchen equipment. Wash & restock pots, pans, food preparation bowls & dishes following HACCP guidelines. Perform a full range of kitchen cleaning & organizing tasks. Perform a full range of kitchen cleaning tasks. Use hand tools, sweep, mop, dust, polish silverware, vacuum, & wash equipment & dishes & areas of the facility. Stock front of the house and back of the house and execute dining room attendant duties as assigned. Bus dishes, food, and trash byproduct as needed from dining area. Clean and sanitize tables. Work independently or as part of a group with minimal supervision. Provide training and support to less experienced staff. Guide, delegate & assign a wide range of tasks to student assistants. Maintain general security of the Unit food, equipment & supplies. Successful completion of Sanitation/Food Borne Illness prevention (HACCP) & annual renewal. Remain conscience of potential hazards; communicate hazards to supervisor. Use of heat & chemical. Maintain & record concentration & temperature levels of dish/pot washing equipment. Use appropriate Personal Protective Equipment (PPE). Keep work area clean & debris free. Identify & correct hazards. Set-up/clean equipment, work tables, sinks & drains at beginning, during & end of shift. Ensure compliance with State & Federal Sanitation Guidelines. Use appropriate cleaning agents to perform general kitchen maintenance. Notify management of maintenance problems. Independently safely use, assemble, disassemble & train others to use kitchen equipment following University Dining Services standards. Minimize & eliminate waste by effective use of resources. Scrape out containers. Follow production flow plans. Sort waste for recycling & pre/post-consumer composting. Identify sustainability short-falls. Ensure all tasks & guest interactions are accomplished with a high sense of urgency. Interact with internal & external customers by demonstrating professionalism, enthusiasm & integrity. Convey welcoming attitude. Greet customers. Interact pleasantly. Anticipate Customer needs. Display a positive demeanor. Participate in production & unit/departmental meetings when needed. Physical Demands: Lift trash, cooking pots and cleaning/kitchen equipment weighing up to 40 pounds on a continual basis and for extended periods of time.
Use ladder when retrieving items from high shelves.
Work for extended periods of time in a environment of wide temperature variation including but not limited to high humidity and heat.
Position requires frequent daily bending, stooping, reaching overhead, pushing, pulling, walking, standing, and lifting material and supplies weighing up to 50 lbs. Some tasks may have a high rate of repetition, making the same motion or use of a tool (with the force of up to 25 pounds) up to 3 hours at a time (between regularly scheduled breaks). Use of a ladder when retrieving items from high shelves.
Stand for extended periods of time; stoop, bend, kneel, etc to retrieve items from ovens, counters, cupboards or other areas within the dining commons.
Work Environment: THIS IS A PARTIAL-YEAR CAREER POSITION: work an average 70% annually. This position is subject to furlough and curtailment periods where the employee is not at work and without pay; furlough would not exceed three (3) months; furlough anticipated dates between June and September, determined upon business needs. Curtailments occur when business operations are suspended, for example during winter break.
This position may have a 4-day closure for Spring Break and a two-week closure for Winter Break.
Successful completion of certified, company-approved program in Sanitation/Food Borne Illness prevention within 90 days from date of hire.
Schedule is subject to change with only 12-24 hours notification.
Work flexible/variable schedule including occasional overtime, evenings, weekends and holidays, usually on short notice to meet operational needs.
Wear appropriate Personal Protective Equipment [PPE] such as rubber gloves and goggles.
This position is subject to completion of a Pre-Placement Medical Exam provided by Employee Health Services, at no charge to the applicant.

Minimum Qualifications: Basic food preparation experience in a retail or dining facility.
Experience following production schedules within specified timelines.
Customer service experience to cooperate with public and other staff members and convey a helpful, positive attitude.
Skill to use proper tools or material to perform a full range of general kitchen cleaning tasks.
Experience using standard industrial custodial and kitchen cleaning equipment.
Skills to communicate in English, both orally and in written form to understand and carry out oral and written instructions and interact effectively with co-workers, supervisors and guests.
Knowledge to maintain a sanitary, safe and organized personal work area using specified cleaning materials and solutions.
Preferred Qualifications: Skill to guide a wide range of tasks to student assistants and kitchen support staff.
Skill to differentiate products' composition, biodegradability, nutrition, etc.
Interpersonal skills to work effectively with and provide excellent customer service to a diverse campus community; communication skills to establish and maintain cooperative working relationships.
Problem solving skills to troubleshoot problems as they arise, find alternate solutions, and implement solutions in a professional and efficient manner.
Knowledge of proper procedures for lifting, handling broken glass and skill to use wet floor signs when mopping floors or cleaning up spills. Skill to verify proper concentration of sanitized solution using test strips.
