Department/College Description Located within the Student Alumni Building, The Brick City Caf and Ritz Sports Zone are two premiere RIT Dining Services venues. These facilities are united by their passion to serve and deliver legendary customer service and experiences that will help support the RIT Community. Reporting to the Chef De Cuisine of SAU Operations, the Sous Chef provides hands on leadership in the kitchens of the Brick City Cafe and Sports Zone.
BCC seats 500 + guests and the Ritz Sports Zone seats 250 +guests in a retail environment. Together the two operations serve around 4500-5000 meals daily with service hours from 7am till 7:30pm. Patrons who frequent these operations choose between several made to order platforms including in house made specialties and visiting chef menu options.

The hours for this position are 8AM-4:30PM-Monday through Friday. Note: The hours may be subject to change as business needs dictate as well as break weeks and intersession. There is occasionally required additional hours or changed schedules for large scale campus events such as Imagine RIT and Commencement.
Responsible to all customers and co-workers to provide excellent service in a friendly, sincere and courteous manner. Work closely with the manager to maintain a high level of customer satisfaction.

Responsible for production of food menu items.
Direct, supervise and train all production staff.
Monitor food preparation and line set up during meal periods
Ensure that all foods are high in quality, served and stored at proper temperatures and times. Follow all New York State and Monroe County health codes as they relate to health, sanitation and safety
Plan preparation schedules, requisition food supplies from storage and assist production manager with ordering
Work with supervisors, managers and vendors to ensure staff coverage in all areas.
Ensure cleanliness, sanitation and safety of unit and equipment as well as proper storing, rotation and labeling of items
Create and document all recipes in menu for CBORD database working with assistant manager and Read, interpret, update and follow standardized recipes. Monitor accuracy of recipes.
Understand department and institute personnel policies and objectives to better deal with staff and customers
Possess an awareness and basic knowledge of allergens, food sensitivities and dietetic restrictions. Work with the customer and management in resolving potential diet limitations of the customer
Carry out special assignments as requested by managers
Report to work on time, adhere to break policy, wear proper uniform and hair restraint.
Attend meetings and seminars as requested by manager
Other duties as assigned
Required Minimum Qualifications
3 years of varied cooking experience including high volume and fine dining
Serve Safe certification or ability to obtain within 6 months of hire date
General knowledge of kitchen equipment including but not limited to: 20 Qt. mixer, Convection oven, turbo chef, combi oven, steam kettle, charcoal grill, fryer, dishwasher, knife skills
Basic computer skills including Microsoft outlook and menu management systems
Ability to multi-task, manage multiple tasks simultaneously, and work with a sense of urgency.
Familiar with different cooking techniques.
Maintains a positive attitude when working alone, with a team and under pressure.
Good problem solving and troubleshooting skills
