Dining Services at The Ohio University seeks to fill the position of a full time Executive Pastry Chef. This position will be responsible for developing and managing an extensive baking, and pastry program based out of the Culinary Production Kitchen that will provide items to catering, cafes, Traditional all you care to eat operations, and other Dining Services operations as needed. Overall responsibilities will include sourcing ingredients and menu development for new and innovative items; managing quality control of prepared items for retail and catering; training of line level staff and student employees to execute such items, and recipe development using our internal program. Items required would be: layered tortes, individual bombs, French macarons, tarts, roulades, verrines, cake pops, sheet cakes and gluten free items; responsible for food production; enforces high quality standards; can meet deadlines; responsible for sanitation plan and procedures in accordance with HACCP and all applicable food codes and practices; assists Executive Chef with menu forecasting, item creation, and purchasing; performs at special functions and events outside of dining unit. This is a 24-month term position.
Bachelor's Degree in Culinary/Pastry Arts or combination of culinary experience and education; three years of documented experience in pastry arts; experience in kitchen management and food production; five years of documented supervisory experience in a culinary profession; experience in high volume catering or restaurant; knowledge of Serve Safe or similar food safety programs; four years of experience with HACCP principals; ability to read and interpret recipes, safety rules, operating instructions, and procedure manuals; ability to write routine reports and correspondence; ability to speak effectively to customers or employees; must be able to lift and/or move up to 20 pounds regularly and up to 50 pounds frequently.
ACF, Pro Chef, or Pastry Arts Certification; experience supervising classified civil service, unionized labor force, and students; experience with C-bord or other similar menu management system.
Target Salary: $50,814.00 - $63,000.00 Annually
