Rutgers, The State University of New Jersey, is seeking a Pastry Chef for Rutgers Dinning Services. This position works under the direct supervision of the Executive Pastry Chef and assists in the daily operations of the Bakeshop. The Pastry Chef collaborates with the Head Baker on daily tasks and schedules of bakers and utility workers. This position oversees the bakeshop staff in the absence of the Executive Pastry Chef. In addition to making breads and pastries, other duties include assessing inventory and supplies, maintaining safe and sanitary working conditions, helping develop baking formulas and full cycle menus and/or suggesting alternative baking methods.
Among the key duties of this position are the following:
Manages all day-to-day operations of the pastry and bakery section of the kitchen.
Prepares a wide variety of goods such as cakes, cookies, pies, bread etc. following traditional and modern recipes.
Produces all baked goods including but not limited to artisan breads and rolls, muffins, bagels, laminated Danish, laminated croissants and doughnuts etc.
Develops, designs, or creates new ideas and items for Pastry Kitchen;Creates new and exciting desserts to engage the interest of customers.
Decorates pastries and desserts using different types of icings, toppings etc. and ensures the food presentation will be beautiful and exciting.
Follows proper handling and right temperature of all food products; Checks the quality of raw and baked food products to ensure that standards are met.
Coordinates activities of bakers and workers engaged in food preparation. Supervises and coordinates all pastry and dessert preparation and presentation.
Monitors stocks for baking ingredients such as flour, sugar etc. and makes appropriate orders within budget. Check quality of material and condition of equipment and devices used for baking.
Reports all equipment problems and maintenance issues, known safety hazards, or unsafe practices and procedures to supervisor immediately.
Attends all scheduled employee meetings and brings suggestions for improvement.
Minimum Education and Experience:
Requires a degree in culinary arts, Hotel and Restaurant Management, or a related major; or an equivalent combination of education and/or experience.
A minimum of two (2) years of related experience in the culinary, food, and beverage, or related professional area.
Required Knowledge, Skills, and Abilities:

Must possess and maintain a valid driver's license and be willing to travel, when necessary, to sites throughout New Jersey for business demands.
Minimum of 4 years of experience in pastry baking or Pastry Chef Experience with high volume food production.
Physical Demands and Work Environment:
Must be able to lift and carry food and equipment items.
Must be able to work a flexible schedule including extended daily hours, weekends, or during winter recess.
May be required to travel to other campus locations for events/meetings.
